Baked salmon with greens

This recipe is inspired by Diana Henry from her book FROM THE OVEN TO THE TABLE

Serves 2:

300g green beans, asparagus, tender stem broccoli or any combination of these
2 salmon fillets
Handful of breadcrumbs mixed with parsley, chopped garlic and 1tsp dijon mustard

Put the greens in a roasting tin, toss in some olive oil, salt and pepper.

Set salmon fillets on top, brush with olive oil and bake for 12-15 mins at 190 degrees.

Meanwhile fry the breadcrumb mixture in some olive oil and add it on top of the salmon
2 minutes before the end of cooking time.

In this photo I served this with some new potatoes (skin on!) and a simple green salad.
