Lentil soup

This is the perfect mid-week comfort food and can be made almost entirely with store cupboard / freezer ingredients.

This is what you need (serves 4):

250g green lentils (brown or puy are good too but will take a little longer to cook)
1 onion, sliced
3 cloves of garlic, sliced
1 large carrot, sliced
1 tin of tomatoes
fresh or dried herbs e.g. thyme, oregano or parsley
1l chicken or vegetable stock (can also be made with water but for more nutrients and flavour I prefer stock)

In a little bit of olive oil sauté the onion and garlic slices until fragrant. Add the lentils and carrot and stir for a couple of minutes. Add the remaining ingredients, cover with a lid and simmer for about 30 minutes. Adjust seasoning with sea salt and black pepper and a sprinkle of fresh herbs of your choice. Also nice with a little parmesan grated on top :)
