Teriyaki salmon with stir-fry veg and noodles

This one is a winner with the whole family! If you don’t like salmon you can replace it with chicken or tofu.

For 2 salmon fillets:

In a non-stick pan mix the following:
2 cloves of garlic, finely chopped or grated
1 thumb size piece of ginger, grated
5 tbsp soy sauce
4 tbsp mirin
1 tbsp honey
1 tbsp sesame oil

Heat the mixture gently and add the salmon, cook for approximately 5 minutes on each side or until cooked through.

Separately stir fry any of the following (or any other veg you have to hand!)in a little coconut oil:
1-2 carrots, finely sliced
Mushrooms, sliced
1 red or yellow pepper, cored and sliced
Handful of peas
Broccoli florets
Green beans
Baby sweetcorn
Mangetout

Season the veg mix with some salt and pepper, add some cooked noodles (egg, buckwheat or rice noodles are all great).
On two plates serve the veg+noodle mixture with a salmon fillet on top. Spoon over the remaining sauce.
Optional extra: Add chili sauce, chopped raw spring onion and sesame seeds.
